You do not have to be gluten-free to enjoy the first of a three series cooking class with Dr. Anna Colombini, naturopathic physician. She will teach you the essentials on preparing you and your kitchen for easy, healthy meal preparation. This two hour class will begin with Dr. Colombini explaining the importance of diversifying your diet with gluten-free cooking and how the Mediterranean diet can improve your heart health. The second part of the class she will delve into cooking: teaching you simple, nutritious tips for preparing Mediterranean cuisine. She will demonstrate three recipes including: Citrus Basil Cod, Canellini Chirizo Stew and Lisa's Edamame Perfection.

Rediscover the fun of making simple, delicious meals. Dr. Colombini will demonstrate how to use rich, colorful foods to make delectable recipes that leave you feeling indulged, not deprived.
The gluten -free cooking series is comprised of three classes, each featuring a demonstration of the preparation of three primary recipes, with sharing of each dish among students as they are created. During class, Dr. Colombini will offer insights from working with gluten-free patients in her naturopathic practice, and will talk about why the body needs to avoid specific foods and eat more of others. Dr. Colombini's easy presentational style and her roundup Q & A sessions at the end of each class make her gluten-free classes worthwhile whether you have food sensitivities or not.
Class One:
Creating Digestive Health Through Food
A brief background on how our digestive system functions (or should) will be given, followed by an examination of what makes one system healthy and the next, unhealthy. The difference between food allergies, food intolerances and Celiac disease will also be discussed. The second half of class will be dedicated to a cooking demonstration and tasting. The 3 recipes included in the demonstration are Curried Carrot Ginger Soup, Spicy Tamari Salmon and Cozy Pear Crisp. Learn to cook without gluten and get some inspiration for cleaning up your diet!
Class Two: Eat Richly with Gluten-Free Cooking
Dr. Colombini will discuss the importance of nutrient-dense foods and their role in preventing disease. Sample meal plans will be given to help people navigate a new eating path, and Dr. Colombini will demonstrate three more recipes made with non-inflammatory, gluten-free ingredients. After observing the prep demonstration, students will enjoy Mediterranean Chicken, Garlic Roasted Winter Vegetables, and Chocolate Grenache and Macadamia Butter Sauce with Winter Fruit. Another fresh, organic meal made while you watch, ready to eat and with nobody expecting you to clean it up later!
Class Three: Hints of Spring with Gluten-Free Cooking
Ah, oils. Which ones to cook with, which ones to consume cold? And why? In this final installment, Dr. Colombini will tell students all they need to know about choosing high quality cooking oils to prevent harmful breakdown by-products. She'll discuss burning point temperatures, processing methods, and the importance of essential fatty acids in digestive health. She'll conclude by demonstrating how to prepare Thai Quinoa Salad with, Lemon Cilantro Halibut, and Roasted Pears with Cashew Cream Topping.
Therapeutic Weight Loss and Lifestyle Class Series
This six-week, medically guided weight loss program will help you understand the physiology of weight loss and how to create a lifestyle that supports your goal. Dr. Colombini will discuss the essentials of nutrition, exercise and stress management, and will explain how hormones affect weight. This class series will encourage you to leave guilt at the door and will nurture the concept of empowerment and appreciation for the many positive things our bodies do for us each day.
Inner Beauty: A Holistic Approach for a Lifetime of Health
Dr. Colombini will be the keynote speaker at the Women's Wellness Weekend at the YMCA Camp Seymour.
